About This Recipe

This fun tomato bruschetta flight is the ultimate summer appetizer! As soon as tomatoes hit their peak, classic bruschetta goes straight to the top of my menu.

Start with a simple mix of chopped tomatoes, olive oil, and salt, then layer on toppings inspired by flavors from around the world. Think creamy burrata with pesto, cream cheese with lox and capers, or goat cheese with Herbes de Provence.

Have fun with the combinations, make it your own, and if you’re looking for even more bruschetta inspiration, this roasted cherry tomato bruschetta is always a crowd favorite!

🧂 Topping Ideas

Build your board by starting with the classic tomato mixture below, then layer each one with these toppings:

  • 🇬🇷 Greece: Olive tapenade + crumbled feta + olive oil+ mint
  • 🇮🇹 Italy: Pesto + mozzarella + balsamic + basil
  • 🇱🇧 Middle East: Labneh (or tzatziki) + pomegranate molasses + sumac + mint
  • 🇫🇷 France: Goat cheese + herbes de Provence + honey + tarragon
  • 🇺🇸 NY Deli-Inspired: Cream cheese + lox + capers + red onion + everything bagel seasoning
  • 🇲🇽 Mexico: Mashed avocado + Cotija + Tajín + lime juice + cilantro

📍 Recipe Tips

  • Keep tomatoes at room temp for the best flavor.
  • Lightly toast the bread so it’s sturdy enough to hold toppings without getting soggy.
  • Let spreads (like goat cheese or cream cheese) sit out for a few minutes before serving so they’re easy to spread.
  • Salt your tomato mixture just before serving, this helps avoid extra liquid pooling at the bottom.
  • When spooning tomatoes onto bread, strain slightly to avoid adding too much moisture.
