  • 2 cups vine or heirloom tomatoes diced

Instructions

  • In a bowl, toss tomatoes with olive oil, salt, pepper.
  • Let sit at room temperature for 10–15 minutes before using.
  • When assembling, spoon tomatoes onto toasted bread, avoiding excess liquid.
  • Lightly toast sliced baguette until golden but still soft in the center.
  • Spread base layer (cheese, spread, or dip) on each slice.
  • Spoon on tomato mixture, avoiding excess liquid.
  • Top with chosen garnishes and serve immediately.

Notes

    • Keep tomatoes at room temp for the best flavor.
    • Lightly toast the bread so it’s sturdy enough to hold toppings without getting soggy.
    • Let spreads (like goat cheese or cream cheese) sit out for a few minutes before serving so they’re easy to spread.
