This simple shaved pineapple dessert was inspired by two things. One, is the popular trend of shaving frozen fruit and the other is the classic Hawaiian shave ice that you find all throughout the islands.
If you’ve ever had true Hawaiian shave ice, you know the texture is incredibly soft and fluffy, almost like fresh snow. It melts in your mouth and soaks up flavors beautifully. And when frozen pineapple is finely grated, it creates a light, fluffy texture similar to shave ice.
I kept this frozen pineapple dessert perfectly simple at home. All you need is a scoop of ice cream, freshly shaved pineapple right on top, then finished with a drizzle of creamy condensed milk and toasted coconut flakes.
It’s bright, creamy, tropical and comes together in minutes!
📋 Ingredients

- Pineapple: Look for deep golden pineapples with less green for a sweet and ripe fruit. Cut them into larger wedges before freezing for easier grating.
- Vanilla Ice Cream: Let it sit out for a few minutes so the ice cream is easier to scoop. Coconut ice cream or mango sorbet would also be delicious.
- Sweetened Condensed Milk: Thick, sweet and creamy, condensed milk is milk that’s been reduced and sweetened. It has a rich, almost caramel-like flavor and because it’s so decadent, a drizzle is all you need.
- Toasted Coconut Flakes: Shredded coconut is lightly toasted in a skillet until just golden. It adds a lovely nutty flavor and a bit of texture to the pineapple dessert.
How to Toast Coconut
- Add unsweetened coconut flakes to a dry skillet over medium heat. Use a spatula to stir frequently until lightly golden.
- Once the coconut just turns color, remove immediately as it can burn quickly.
- Cool completely and store leftover toasted coconut in an airtight container or reusable bag.

- ⅛ frozen pineapple large wedge
- 2 scoops vanilla ice cream
- 2 tablespoons sweetened condensed milk
- 2 tablespoons toasted coconut flakes
Instructions
- Scoop vanilla ice cream into two bowls.
- Using a microplane or fine grater, grate the frozen pineapple directly over the ice cream until light and fluffy.
- Drizzle 1–2 tablespoons of sweetened condensed milk over the top.
- Sprinkle with toasted coconut flakes. Serve immediately.
