    Greek Tomato Fritters

    If you are looking for a true taste of the islands, these Greek tomato fritters is exactly what you need!

    Also called domatokeftedes is Greek, these simple tomato fritters originated in Santorini and are loaded with fresh ingredients, including chopped tomatoes, loads of fresh herbs and crumbled feta cheese.

    Once the tomato fritters are fried to perfectly golden brown, they can be served with a side of cool Greek yogurt flavored with lemon and dill.

    Tomato Fritter Ingredients

    • Tomatoes: Use low moisture tomatoes such as roma tomatoes, cherry tomatoes or vine tomatoes.
    • Red Onion: About ¼ of a medium sized red onion chopped into a small dice. If you don't like red onion, chop 2-3 green onions and add that.
    • Fresh Mint: This is the perfect recipe to use up fresh mint! Take the leaves off the stem and give the herbs a good chop so there are no large pieces left.
    • Fresh Dill: Remove the dill from thick stems and give it a good chop. Save some dill for ganrish and to use in the yogurt sauce.
    • Fresh Parsley: Optional but offers another layer of fresh herbs.
    • Feta Cheese: A good Greek sheeps milk feta cheese in brine. The pre-crumbled options tend to be drier than a block of feta in brine.
    • Dried Oregano: You could use fresh oregano as well.
    • Flour: This recipe works with all purpose flour or a gluten free flour mix.
    • Baking Powder: Just a touch to give the fritters a nice texture.
    • Neutral Oil: A high smoke point oil that is neutral in flavor, such as avocado oil or vegetable oil.
    • Greek Yogurt: Mixed with a bit of fresh dill to serve alongside the tomato fritters.
    • Lemon: A squeeze of fresh lemon juice over the fritters and mixed into the yogurt sauce.

    How to Make Santorini Tomato Fritters

    1. To a large bowl, add chopped tomatoes, herbs, red onion, feta cheese, flour, baking powder and salt and pepper.
    2. Give everything a good mix until a thick batter is made. It should look like a very thick pancake batter. If mixture is too dry and not binding, add a tablespoon or two of water.
    3. Pour oil in a wide skillet and bring up to 375 degrees Fahrenheit. Use a tablespoon to scoop tomato mixture into the hot oil, gently pressing down to flatten.
    4. Fry 4-5 tomato fritters until golden brown on both sides.
    5. Once done, place fritters onto a paper towel lined plate
    6. For the yogurt sauce, mix Greek yogurt with dill and lemon juice and serve Greek tomato fritters with a dollop of yogurt sauce.

    Tomato Fritters

    • 2 vine tomatoes diced into ¼ inch cubes
    • ½ cup crumbled feta
    • ½ red onion diced
    • ½ cup fresh dill finely chopped
    • ¼ cup fresh mint finely chopped
    • 14 cup fresh parsley leaves finely chopped
    • ½ cup all-purpose flour
    • ½ teaspoon baking powder
    • 1 teaspoon dried oregano
    • ¾ teaspoon Kosher salt
    • ½ teaspoon Ground black pepper
    • Vegetable oil for frying
    • Lemon wedges for serving

    Yogurt Sauce

    • ½ cup greek yogurt
    • Few sprigs of fresh dill finely chopped
    • 1 teaspoon lemon juice

    Instructions
     

    • To a large bowl, add chopped tomatoes, herbs, red onion, feta cheese, flour, baking powder and salt and pepper.
    • Give everything a good mix until a thick batter is made. It should look like a very thick pancake batter.

    • Fry 4-5 tomato fritters until golden brown on both sides.
    • Once done, place fritters onto a paper towel lined plate.
    • For the yogurt sauce, mix Greek yogurt with dill and lemon juice and serve Greek tomato fritters with a dollop of yogurt sauce.

    Mixture can be made up to a dan in advance. 
    Tomato fritters can be made, fried, chilled and frozen for later use. After freezing, place fritters on a wire lined baking sheet and bake at 350 degrees Fahrenheit until warmed through. 
    These Greek tomato fritters are great served immediately after frying and also at room temperature.
