This irresistible lychee mojito is a refreshing twist from the classic mojito! A blend of sweet lychee, fresh mint and crisp cucumber creates a delightful fusion that may just become your favorite summer cocktail!

About This Recipe

Refreshing and light, lychee mojito is the ultimate summer drink! The sweet lychee brings a tropical twist to the classic mojito, with fresh mint and the addition of crisp cucumber. Once the cucumber and mint are gently muddled, add a splash of lychee juice, simple syrup and white rum to complete the mix and cocktail hour is officially ready!

Then all you'll need is a plate of ahi poke nachos, a sunny day and a relaxing lounge chair and you my friends are doing summer right!

📋 Ingredients

Ingredients for lychee mojito with fresh mint and simple syrup.
  • White Rum: White rum is lighter than dark rum and is usually the spirit of choice for making a refreshing mojito.
  • Simple Syrup: Make your own simple syrup by combining 1 cup water and 1 cup of white sugar in a small pot. Bring to a simmer until the sugar dissolves and slightly thickens.
  • Lychee: Canned lychees are packed in a sweet syrup that can also be added to the lychee mojito. If using fresh lychees, add ½ ounce more of simple syrup to add more sweetness.
  • Fresh Mint: This is the time to use fragrant fresh mint and muddle the leaves to open up all of the fresh mint aromas.
  • Fresh Lime: Another classic ingredient in mojitos, I like to muddle a small wedge of lime with the mint.
  • Cucumber: Optional, but lychee and cucumber pair very well together and create a deliciously refreshing lychee mojito.

🍋 Substitutions and Variations

  • Infuse the simple syrup with other flavors, such as ginger, mango or berries.
  • Use other spirits such as vodka, blanco tequila or gin.
  • Top the drink with a final splash of sparkling water.
  • Use fresh lychee instead of canned, but you may need to add another ½ ounce of simple syrup to the mojito.
  • Add a splash of elderflower liquor such as St Germaine which has pear and lychee undertones.
  • Make a lychee mocktail! Instead of rum, add both ginger beer and sparkling water for a not to sweet but refreshing mocktail.

⏲️ Instructions

  1. Make the simple syrup. In a small pot, add 1 cup of sugar and 1 cup of water. Bring the mixture up to a simmer and continue simmering until the sugar dissolves and syrup slightly thickens, about 10 minutes. Pour the syrup in a resealable jar and bring to room temperate and use when ready.
  2. Muddle the mint and cucumber. Add a few slices of cucumber, mint and lime wedge t the bottom of a tall glass and use a muddler or the back of a sturdy wood spoon and muddle everything together for 10-15 seconds.
  3. Pour and serve. Add the simple syrup, lychee juice and white rum to the glass and fill the glass with ice. Add a splash of sparkling water, if using and garnish with lychee and fresh mint.

  • Chill the glass for 10-15 minutes before making the lychee mojito.
  • Let the simple syrup come to room temperature before adding to the cocktail.
  • If you don't have a muddler, use the back of a tall sturdy wooden spoon.

    Sam, this mojito look incredible! It's my favourite drink, hands down, and I love all the twists you've put in it, especially that ginger syrup. These photos are gorgeous - I wish I had a few jars of this to sip on right now (who cares that it's only 7 am?!).
