    This lychee mojito is incredibly refreshing! Fresh cucumber and mint is muddled and shaken with lychee juice and ginger syrup.

    I have been addicted to this concoction for the last…uhh…few days. How come no one told me about the amazing process of muddling? The aroma and oils of mint blossom and perfume this entire drink.

    It’s pretty simple, really. Grab your cute mason jar, because  everything in a mason jar looks adorable. Throw in some cucumber chunks and fresh mint leaves and take the back of a large wooden spoon and…muddle! Press down and around, break up the cucumber and bruise the mint. The smell of the bruised mint is bright and so refreshing.

    I layered this refreshing mojito even more and made a quick ginger simple syrup to pair with the mint and cucumber. This mojito began to create levels of sweet, spicy and bright.

    I also added sweet lychee juice and topped this libation with a little pour of sparkling water. Once I took a sip and my nose tickled the fragrant mint, I was in heaven. This is..and I promise you…the best summer cocktail you will have.

    Ingredients
     
     

    Ginger Lychee Mojito

    • 2 ounces white rum
    • 2 Tb ginger simple syrup
    • 1/4 cup lychee juice
    • 2 ouces Sparkling water
    • Few slices of cucumber peeled and sliced in rounds
    • Few sprigs of fresh mint
    • Ice

    Ginger Simple Syrup

    • 2 cups white sugar
    • 1 cup water
    • 2, 1 inch pieces of fresh ginger peeled

    Instructions
     

    Ginger Simple Syrup

    • In a small pot, add the sugar and water. Bring to moderate heat and allow to lightly boil. Once sugar has dissolved add ginger and allow to steep for 10 minutes off heat. Pour syrup carefully in a glass mason jar and allow to room temperature. Cover and store in refrigerator until ready to use.

    Ginger Lychee Mojito

    • In a tall mason jar (or glass) add 3-4 cucumber rounds and several mint leaves. Use the back of a large wooden spoon to muddle the mint and cucumber so that the mint begins to bruise and break down the cucumber.
    • Add ice to the glass , ginger simple syrup and lychee juice. Top with sparkling water and garnish with extra cucumber and fresh mint leaves.

      Sam, this mojito look incredible! It’s my favourite drink, hands down, and I love all the twists you’ve put in it, especially that ginger syrup. These photos are gorgeous – I wish I had a few jars of this to sip on right now (who cares that it’s only 7 am?!).

      I’m definitely going to have to make a virgin version of this drink for my husband! He goes gaga for ginger, lychee, and mint. Sounds so refreshing!
