Banana Stuffed Challah French Toast

The title sounds like a mouthful, doesn’t it? But oh what a delicious mouthful this is. I made it on a whim just yesterday morning after my 1.5 mile run, which by the way felt amazing after my 1st 5K. I also still had some challah bread leftover and very over-riped bananas that I was begging to use.

A bread pudding was obvious and done so many times already, but since I still have over-ripe bananas left, that’s on the menu for today. So instead I decided to stuff these eggy slices of challah bread with mashed banana and coat in a thick sweet eggy french toast mixture. This is just enough for about 2 people since that’s all the challah I had left, but is easily doubled and tripled for a larger crowd.

Method:

1) Create an egg mixture with eggs, cinnamon, nutmeg, brown sugar, vanilla and milk. Whisk well to combine. Add cinnamon to mashed bananas.

2) Cut a slit into the thick bread slices but don’t go all the way through. This will create  a pocket. Use a small spoon  to stuff bananas into the pocket. Don’t over-fill too much.

3) Dip in egg wash on both sides and all bread to soak up the mixture. Melt butter in non-stick pan, coating all sides. Cook french toast on one side until golden brown and turn over to cook other side.
