I have been dangling sweets in front of your face all last week and I think it’s finally time to start thinking about what we’ll be having in the hand that’s not holding the wine glass…yes?
Wine and appetizers is usually how the best parties start, and if they’re not, I don’t know what parties you’re going to..but run! This simple and elegant party starter is so easy to put together and will be having all your guests cheering “ooh” and “aahs”.
I’ve said it before and I’ll say it again…there is nothing better than simple and bold flavors! Robust wine, earthy mushrooms, fresh herbs and my new favorite ingredient, compound butter takes this bite over the top!
I knew exactly what I wanted to do when the guys at Kroger sent me an awesome box of assorted butters to try. I was craving something savory and earthy and being inspired by our recent trip to Spain, mushrooms and tapas was the first thing that popped in my head! I had no idea how prominent mushrooms were in the Spanish culture. We saw them at all the farmers markets and on every menu. They were large, fresh and looked amazing. Of course being so vast in Spain, they were also about half the price as in the States, but I just had to reminisce on our Europe trip one last time.
Here is the awesome assortment of compound butters that Kroger sent me.
Normally I would just make my own compound butter, which is basically butter with any flavorings you want to add to it. But after reading their simple and whole ingredient list, I was glad they did all the work for me! I already have plans for that Cinnamon Brown sugar butter (hello bananas foster) and the lemon garlic and herb, which will be going on tonight’s salmon. But I was eyeing that roasted garlic and herb butter and knew it would pair perfectly with earthy mushrooms and a few shots of deep Cabernet.
The best part of this mushroom crostini is how EASY it is! All you have to do is throw some of your favorite mushrooms in a baking dish, add some wine, herbs and a few healthy dots of the compound butter and you have a beautiful appetizer ready in 20 minutes.

- 3 cups assorted mushrooms cleaned and cut into large pieces (I used button and oyster mushrooms)
- 3 sprigs of fresh thyme leaves removed and roughly chopped
- 1/4 cup red wine I used Cabarnet
- 2 Tb Kroger Private Selection Roasted Garlic and Herb compound butter
- Olive oil for drizzling
- Salt and pepper to taste
- Sea salt for finishing (optional)
- French or ciabatta bread sliced and cut in half, grilled
- Fresh parsley leaves removed and chopped for garnish
In a baking dish, add mushrooms, wine, thyme and olive oil and coat evenly. Top mushrooms with compound butter evenly.
Roast mushrooms in oven at 400 degrees F for 20 minutes, or until the mushrooms begin to break down and soften.
Spoon mushroom mixture over grilled bread and top with fresh parsley and sea salt.
This recipe is can be easily multiplied for more servings.
