I couldn't wait to share this easy summery mezcal cocktail! Let's just say we have been testing and uh, retesting this bright berry drink a few times over the summer have have been absolutely obsessed!

Do you like Smokey? Then you'll love Mezcal

The flavor of smoke is one of my favorite flavors. I've had everything from smoked ice cream to smoked cheeses, so when I was first introduced to mezcal and the subtle smokiness, I fell in love.

Unlike tequila which is made from one distinct agave plant, mezcal on the other hand can be made from up to 50 different plants. The smoky flavor comes from the agave being cooked in pits lined with lava rocks, whereas tequila is steamed.

Smoky, slightly sweet and a bit tart, this  refreshing mezcal cocktail is muddled with fresh raspberries and mint and garnished with a Tajin rim.

Cocktail Ingredients (feel free to adjust with seasonal fruits)

Fresh Raspberries: Use whatever is in season, strawberries and blackberries would be delicious too.

Fresh Mint Leaves: Save some for garnish,basil would be great as well.

Citrus: This recipe has the juice of half an orange and half a lime. Grapefruit and cara cara oranges would work well when in season.

Mezcal: We used Vida mezcal and really enjoy it's smoothness and good price point.

Simple Syrup: To make sure own, just simmer 1:1 sugar and water until sugar dissolves and slightly thickens. Then pour into a mason jar and let cool before refrigerating.

Tajin: A Mexican spice blend with dried citrus and chile that is fantastic on watermelon and pineapple, we opted to line the glass with a tajin rim that have a nice compliment to the smoky and sweet flavors. You can find tajin at International or Latin markets.

And just in case you need something to snack on...

Might I suggest salmon tacos with mango salsa to go with the raspberry mezcal cocktail or some tilapia ceviche.

Ingredients
 
 

  • 6-8 fresh raspberries + more for garnish
  • 4-5 fresh mint leaves
  • 2 ounces Mezcal
  • 1 ounce simple syrup
  • ½ an orange juiced
  • ½ a lime juiced
  • Ice
  • Tajin for rimming glass

Instructions
 

  • In a shaker, muddle raspberries and mint until fruit releases its juice.
  • Fill ¾ of the way with ice and pour in mezcal, simple syrup and citrus juices.
  • Shake well for at least 30 seconds
  • Use the leftover citrus peel to rim around your glass and dip rim in tajin.
  • Fill glass with ice (crushed works too) and pour drink without straining.
  • Garnish with fresh raspberries and mint sprig.

Notes

This drink is highly customizable with other berries or citrus, so have fun with it!
If you like a smoother drink textually, strain the cocktail instead, but I love the bits of fruit and mint.
