About This Recipe
If you love everything bagels, this stuffing is going to be your new favorite Thanksgiving side. It has all the savory, herby aromatics of a traditional stuffing, with celery, onion, and fresh herbs. But instead of plain bread cubes, it starts with torn pieces of everything bagels for extra flavor and a chewy, toasty texture.
This bagel stuffing is vegetarian, easy to make ahead, and can even be made kosher-friendly by swapping the butter for olive oil or dairy-free butter. It’s perfect for Thanksgiving dinner or even brunch the next morning with a fried egg on top (speaking from experience).
📋 Ingredients

- Everything bagels: About 4–5 large bagels, ideally a day old. Tear or cube them into 1–1½-inch pieces for the best texture.
- Everything bagel seasoning: Use about ¼ cup store-bought or homemade.
- Aromatics: Onion, celery and garlic are classic stuffing aromatics.
- Fresh herbs: Sage, thyme, and rosemary bring classic Thanksgiving flavors.
- Eggs & vegetable broth: Bind the stuffing together and keep it perfectly moist.
See recipe card for full information on ingredients and quantities.
🍋 Substitutions and Variations
- Bagels: Use savory ones like sesame, poppyseed, or pumpernickel. Avoid sweet bagels.
- Add-ins: Sautéed mushrooms, roasted chestnuts, or cooked sausage (turkey, chicken, pork, or even vegetarian sausage) would all be great additions.
- Kosher-friendly: Skip the butter and use olive oil or dairy-free butter.
- Brunch twist: Bake and top with a runny fried egg for a delicious savory breakfast option.
⏲️ Instructions

Toast the Bagel Cubes: Spread torn bagel cubes on a baking sheet, drizzle with olive oil and sprinkle with everything bagel seasoning and toss to coat. Toast for 8-10 minutes.

Sauté the Aromatics: In a large skillet, melt butter and olive oil. Add onion and celery and cook for about 10–12 minutes. Stir in garlic and chopped herbs and cook for another minute.

Mix Everything Together: In a large bowl, combine the toasted bagel cubes, sautéed vegetables and pour in vegetable broth mixture and toss to evenly coat.

Bake Until Golden: Transfer the stuffing to a buttered baking dish and dot with butter. Bake at 400°F for about 40 minutes, uncovered, until the top is golden.
📍 Recipe Tips
- Dry the Bagels: Toast them first so they can soak up the liquid without getting too mushy.
- Sauté Slowly: Cook the celery and onion for about 10–12 minutes so they soften and get sweet, then add garlic and herbs at the end.
- Mix Well: Toss everything well so every piece of bagel is coated with the egg and broth mixture.
- Bake uncovered: Bake at 400°F for about 40 minutes until the top is golden and crisp.
- Make ahead: Assemble up to 2 days in advance, refrigerate, then bake before serving. Add a splash more broth if it looks dry.
