- 4-5 large everything bagels cut or torn into 1–1½-inch cubes
- ¼ cup everything bagel seasoning
- 3 tablespoons butter divided
- 2 tablespoons olive oil divided
- 2 celery stalks diced
- 1 small yellow onion diced
- 3 garlic cloves finely chopped
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon fresh thyme leaves
- 1 teaspoon chopped fresh sage
- 2 cups vegetable broth
- 2 large eggs whisked
- Salt and pepper to taste
- Chives finely chopped, for garnish (optional)
Everything Bagel Seasoning
Preheat the oven to 400°F. Spread bagel cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and toss with the everything bagel seasoning. Toast for 8–10 minutes, until slightly crisp and dry.
In a large skillet, heat 2 tablespoons of butter and the remaining 1 tablespoon of olive oil over medium heat. Add celery and onion and sauté for 10–12 minutes, until softened. Add garlic, rosemary, thyme, and sage, and cook for another minute.
In a large bowl, whisk together eggs and vegetable broth. Add toasted bagel cubes, any seasoning that may have fallen off, and the sautéed veggies. Toss until evenly coated.
Transfer to a buttered casserole dish and dot the remaining tablespoon of butter on top. Bake uncovered for about 40 minutes, until golden and crisp on top and tender inside.
Once done, garnish with chopped chives, if using. Let cool slightly before serving.
Everything Bagel Seasoning
If making your own seasoning blend, combine all of the ingredients in a small bowl and mix well.
You'll need ¼ cup for this recipe. Store in an airtight jar at room temperature for up to 6 months.
- Dry the Bagels: Toast them first so they can soak up the liquid without getting too mushy.
- Bake uncovered: Bake at 400°F for about 40 minutes until the top is golden and crisp.
- Make ahead: Assemble up to 2 days in advance, refrigerate, then bake before serving. Add a splash more broth if it looks dry.
- Make Your Own Everything Seasoning:
- 1 tablespoon each of poppy seeds, sesame seeds, dried minced garlic, dried minced onion and 1 ½ teaspoon flaky sea salt (or coarse kosher salt).
