  • 2 celery stalks diced
  • 1 small yellow onion diced
  • 3 garlic cloves finely chopped
  • 1 teaspoon chopped fresh rosemary

Everything Bagel Seasoning

Instructions

  • Preheat the oven to 400°F. Spread bagel cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and toss with the everything bagel seasoning. Toast for 8–10 minutes, until slightly crisp and dry.
  • In a large skillet, heat 2 tablespoons of butter and the remaining 1 tablespoon of olive oil over medium heat. Add celery and onion and sauté for 10–12 minutes, until softened. Add garlic, rosemary, thyme, and sage, and cook for another minute.
  • In a large bowl, whisk together eggs and vegetable broth. Add toasted bagel cubes, any seasoning that may have fallen off, and the sautéed veggies. Toss until evenly coated.
  • Transfer to a buttered casserole dish and dot the remaining tablespoon of butter on top. Bake uncovered for about 40 minutes, until golden and crisp on top and tender inside.
  • Once done, garnish with chopped chives, if using. Let cool slightly before serving.

Everything Bagel Seasoning

  • If making your own seasoning blend, combine all of the ingredients in a small bowl and mix well.
  • You'll need ¼ cup for this recipe. Store in an airtight jar at room temperature for up to 6 months.

Notes

  • Dry the Bagels: Toast them first so they can soak up the liquid without getting too mushy.
  • Bake uncovered: Bake at 400°F for about 40 minutes until the top is golden and crisp.
  • Make ahead: Assemble up to 2 days in advance, refrigerate, then bake before serving. Add a splash more broth if it looks dry.
  • Make Your Own Everything Seasoning:
    • 1 tablespoon each of poppy seeds, sesame seeds, dried minced garlic, dried minced onion and 1 ½ teaspoon flaky sea salt (or coarse kosher salt).
