Roasted Mushroom Crostini with Wine and Herbs

  • 3 cups assorted mushrooms cleaned and cut into large pieces (I used button and oyster mushrooms)
  • 3 sprigs of fresh thyme leaves removed and roughly chopped
  • 1/4 cup red wine I used Cabarnet
  • 2 Tb Kroger Private Selection Roasted Garlic and Herb compound butter
  • Olive oil for drizzling
  • Salt and pepper to taste
  • Sea salt for finishing (optional)
  • French or ciabatta bread sliced and cut in half, grilled
  • Fresh parsley leaves removed and chopped for garnish


  • In a baking dish, add mushrooms, wine, thyme and olive oil and coat evenly. Top mushrooms with compound butter evenly.
  • Roast mushrooms in oven at 400 degrees F for 20 minutes, or until the mushrooms begin to break down and soften.
  • Spoon mushroom mixture over grilled bread and top with fresh parsley and sea salt.


This recipe is can be easily multiplied for more servings.
