Mediterranean Charcuterie Board

All you need is 15 minutes to make a vibrant Mediterranean charcuterie board full of an array of mezze with fried halloumi, various dips and fresh vegetables.

Ingredients

Greek Salad Skewers

Fried Halloumi

  • ½ pound halloumi cheese sliced into ¼ inch thick slices
  • 2 teaspoons olive oil for frying

Instructions

Make the Greek Salad Skewers

  • Using small cocktail skewers, thread a cherry tomato, cubed feta, cucumber and Kalamata olive at the end. Continue skewering until all of the toothpicks are used up.
  • Drizzle olive oil onto the salad skewers and sprinkle with dried oregano.

Fry the Halloumi

  • Pre-heat a small skillet to medium heat and drizzle with olive oil. Pat the halloumi slices dry well with paper towels and fry the halloumi in the hot pan until golden brown on both sides, about 2-3 minuets per side.
  • Once done, remove from the skillet and set aside.

Assemble the Mediterranean Charcuterie Board

  • Spoon all of the dips into small bowls.
  • Cut the pita bread into triangles or if using pita chips, break up into large pieces.
  • Arrange the bowls on a large platter or board and fill in the larger areas with larger mezze,, such as the Greek salad skewers, halloumi cheese, sliced salami and pita bread.
  • Fill in the remaining gaps with the smaller mezze, such as the fresh fruit, grilled artichoke hearts, Sumac onions and lemon wedges.

Notes

  • When arranging any kind of charcuterie platter, start by placing the larger items on the latter first then fill in the space with the smaller items.
  • Fill the Mediterranean charcuterie board up and fill in all of the gaps so the mezze board looks full and abundant.
  • Add mezze that work well by mixing and matching together.
  • If serving whole olives or fruit with pits, have a small empty bowl so guests can discard the pit or stems into.
