Preheat the oven to 350 degrees Fahrenheit.
Using an electric mixer, add 8 tablespoons of softened butter, the white sugar and brown sugar and mix well until creamy.
Add the egg and vanilla extract and continue mixing until well combined.
Stir the flour, baking soda and Kosher salt together and slowly add the mixture to the butter and sugar mixture. Mix until the flour is just combined. Add the chocolate chips and continue mixing for another 30 seconds.
Grease the cast iron skillet with the remaining 1 tablespoon of butter and press the cookie dough into the skillet in an even layer. If using two smaller skillets, divide the dough between each skillet.
Place the cast iron on a cookie sheet to prevent possible spillage and bake at 350 degrees Fahrenheit for 28-30 minutes or until the edges begin to brown and the center is soft.
Once done, let the skillet cookie cool slightly and serve with a scoop of vanilla ice cream while still warm.
- Make Cookie Dough Ahead: Mix the dough ahead of time and wrap tightly in plastic wrap. Store the dough in the refrigerator for up to 3 days or in the freezer for up to a month. When ready to bake, let the dough come to room temperature for about 10-15 minutes.
- Use Room Temperature Ingredients: Bring the egg and butter to room temperature. This ensures that the ingredients are well combined and the dough cooks evenly.
- Storage Tips: If there happen to be leftovers (which is rare!), remove the rest of the skillet cookie from the cast iron and store in an airtight container at room temperature for up to 2 days.
