Moqueca  (Brazilian Seafood Stew with Coconut and Tomatoes)

Moqueca is a vibrant Brazilian fish stew that is a breeze to make in  30 minutes!  Use any fish you have available and let it simmer in the lime, coconut and tomato stew.

Lets make moqueca!  First, gather all of  your Ingredients!

Melt coconut oil in a pot and   sauté the chopped onion and  jalapeño for 2-3 minutes.

Add the sliced bell peppers and continue sautéing for anther 2-3 minutes.

Add the garlic, paprika and cayenne (if using) and saute for another 1-2 minutes until garlic is fragrant.

Add the chopped tomatoes, and continue sautéing for another  2-3 minutes to soften  the tomatoes.

Season the fish with salt and pepper and lay the fish on top of the vegetables.

Pour coconut milk on  top of the fish.

Pour enough seafood stock  to completely cover the  fish stew.

Add lime zest and stir  the stew gently.

Simmer the moqueca for 10-15 minutes until the fish is just cooked through.

Serve cooked moqueca on top cooked jasmine rice and garnish with green onions and lime wedges
