Coconut Chia Pancakes
Simple pancakes made with coconut milk for a tropical twist.

- 1 c flour sifted
- 1 Tb sugar
- 1 Tb baking powder
- 1 Tb chia seeds optional
- ¼ teaspoon salt
- 1 c coconut milk
- 1 egg
- 1 Tb oil canola or vegetable + more for drizzling in pan
- 2 Tb butter for cooking pancakes you may need more after a few batches
- Coconut flakes for garnish
Begin by heating up a large non-stick skillet on medium-high heat.
In a large bowl, combine the flour, sugar, baking powder and salt. Stir to combine.
In another bowl, combine the coconut milk, egg, oil and chia seeds. Stir to combine
Add the dry mixture to the wet mixture, whisking to combine.
Once your skillet is heated, add butter and oil and allow butter to melt. Use a ladle or a large tablespoon to spoon dollar sized pancakes in skillet.
Cook pancakes on 1 side until you see little bubbles around the edges. That should tell you that the first side is cooked. Flip over and cook over side for another 2 minutes.
Garnish with flaked coconut.
