Lychee Mojito
- 3-4 slices of cucumber sliced thin
- 1-2 lime wedges
- 4 fresh mint leaves + more for garnish
- 1 ounce lychee juice
- 1 ounce simple syrup
- 2 ounces white rum
- 2 ouces Sparkling water
- Ice
- 1-2 whole lychee for garnish
- Sparkling water optional, to top drink off with
Make the simple syrup. In a small pot, add 1 cup of sugar and 1 cup of water. Bring the mixture up to a simmer and continue simmering until the sugar dissolves and syrup slightly thickens, about 10 minutes. Pour the syrup in a resealable jar and bring to room temperate and use when ready.
Muddle the mint and cucumber. Add a few slices of cucumber, mint and lime wedge t the bottom of a tall glass and use a muddler or the back of a sturdy wood spoon and muddle everything together for 10-15 seconds.
Pour and serve. Add the simple syrup, lychee juice and white rum to the glass and fill the glass with ice. Add a splash of sparkling water, if using and garnish with lychee and fresh mint.

- Chill the glass for 10-15 minutes before making the lychee mojito.
- Let the simple syrup come to room temperature before adding to the cocktail.
