Quinoa Fruit Salad

Recipe inspired by Two Peas and Their Pod

  • 1/2 c quinoa
  • 1 c water
  • Pinch salt
  • Mixture of fresh Fruit:
  • Blueberries
  • Blackberries
  • Raspberries
  • Peach cut into cubes
  • Fresh basil or mint leaves chopped
  • Dressing!
  • 1 lime juiced
  • 2 Tb honey


  • In a small pot, boil the quinoa and water together and then simmer for about 15 minutes until water has evaporated. Fluff with fork and allow to cook to room temperature.
  • Whisk together the lime juice and honey in a bowl until well incorporated.
  • In the same bowl, add your fruit and cooled quinoa.Stir well. Add chopped basil or mint for garnish.
