Herb Crusted Salmon

Herb crusted salmon is a healthy weeknight dinner that's made in nearly 15 minutes! Fresh herbs are pressed onto salmon and roasted with a blend of olive oil, fresh lemon juice and white wine creating a flavorful and tender salmon recipe.

Ingredients

  • 2 pounds salmon skin and bones removed
  • 1 teaspoon Kosher salt
  • ½ teaspoon Ground black pepper
  • 2 whole lemons zested and juiced
  • ¼ cup olive oil
  • ¼ cup white wine such as Pinot Grigio
  • ½ cup fresh parsley leaves finely chopped
  • ½ cup fresh dill leaves finely chopped
  • 2 stalks green onions finely chopped

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Begin by drying the salmon filets very well with paper towels. This will help the seasoning stick to the fish better.
  • Line a baking dish or cast-iron skillet with fresh herbs and a few lemon slices. You can also line with a sheet of parchment paper.
  • Place the salmon on top of the herbs and season generously with salt and pepper.
  • Toss all of the freshly chopped herbs together and scatter them on top of the salmon filets, gently pressing down lightly so the herbs stick to the fish.
  • In a small bowl, whisk together the olive oil, lemon zest and juice and white wine and pour the mixture around the salmon and some on top of the salmon too. If you have extra lemon slices, place a few on top of the salmon.
  • Bake the herbed salmon at 400 degrees Fahrenheit for about 10-12 minutes. Keep an eye on it because thicker salmon may take a bit longer and thinner filets, less time.

Notes

  • You can make this in either a cast iron or sheet pan. A smaller vessel such as a cast iron will yield more sauce and create a poaching environment for the salmon.
  • You can also do the same on a sheet pan, which will make the citrus herb salmon a bit more crisper on the edges but still tender in the middle.
  • The citrus herb salmon recipe can also be done on the stove top. Instead of roasting, place on stove top with a cover on the pan.
  • Ingredients can be easily modified or omitted. For instance, you can leave out the wine and use other types of citrus, such as cara cara oranges and grapefruit.
