In a food processor or blender, combine all the chimichuri sauce ingredients. Begin by pulsing the herbs and add in as such olive as desired consistency.
To cook the steak, prepare a grill to medium-high heat.
Season the steak liberally with salt, pepper and paprika, rubbing the spices all over the meat. Allow to marinate for 20-30 minutes.
Grill the steak for about 6-8 minutes on each side for medium/medium-rare (of course, depending on how thick your steak is as well).
Allow steak to rest at room temperature for at least 10 minutes and then carve slices on the diagonal. Spoon chimichuri sauce over steak and serve.
