Matzo Almond Fruit Crumble

  • 6 matzo crushed into crumbs
  • 1/4 cup matzo meal
  • 2 Tb white sugar
  • 2 Tb brown sugar
  • 1 cup almonds ground
  • 1 stick of butter melted
  • 1 lb bag of frozen fruit
  • 1 tsp almond extract
  • 1/2 lemon zest and juice
  1. In a bowl, mix together the matzo, matzo meal, both sugars and almonds.
  2. Melt butter and add to matzo mixture. Toss with a fork or your fingertips to combine.
  3. Line a medium size baking dish with parchment paper and add 1/2 of the matzo mixture to the bottom. Press down and on the sides of the baking dish. Set aside.
  4. In a food processor, add thawed fruit and pulse a few times until it is a "chunky" puree. Add fruit to a bowl and add lemon juice and zest and almond extract. add fruit mixture on top of matzo mixture and then add the rest of matzo to top it off.
  5. Bake at 350 F for 30-35 minutes until fruit begin to bubble.
  6. Serve with fresh berries and a dollop of Greek yogurt.
