Pear Ginger Cake

This simple pear ginger cake is full of warm and zesty flavors and studded with sweet pears and rich olive oil, creating a decadent dessert.

  • 3 Bosc pears peeled and chopped into 1-inch cubes
  • 2 tablespoons brown sugar

Instructions

  • Pre-heat oven to 350 degrees Fahrenheit and grease a 9-inch spring form pan with oil or butter. Line the bottom with parchment paper and set aside.
  • In a bowl, add the chopped pears and brown sugar and toss together. Set aside while you make the rest of the recipe.
  • In another large bowl, whisk together the flour, baking powder, ground ginger and, cinnamon and set aside.
  • In another bowl, whisk the olive oil, eggs, white sugar and brown sugar, orange juice and vanilla extract. Mix the wet and dry ingredients together and add the chopped pears with all their juices.
  • Give everything a good stir and pour batter into prepared pan and bake for 50-55 minutes. At 45 minutes, take a peek at the cake and use a toothpick or knife to check for doneness by sticking the knife into the cake and if it comes out clean, it's ready. If there is batter, bake for a little longer.
  • Let the pear cake cool slightly before cutting into it. Lightly dust the top with powdered sugar, if desired.
  • This can be enjoyed warm or at room temperature.

Notes

  • Prep the Pears Ahead: If prepping the pears ahead of time, keep the peeled pears ina. larg:e bowl of cold water with a splash of lemon juice to keep them from turning brown.
  • Test the Cake: At the 45 minute park, test the cake by inserting a toothpick in the center, if it comes otu clean, the cake is ready. But if there is some batter, continue baking for another 5-10minutes.
