Greek Tomato Fritters
Greek tomato fritters are savory pancakes that are full of sweet tomatoes, fresh mint, dill and creamy feta cheese. The tomato fritters is fried until perfectly golden brown on both sides and served with a bright and lemony yogurt dill sauce.

Yogurt Sauce
- ½ cup greek yogurt
- Few sprigs of fresh dill finely chopped
- 1 teaspoon lemon juice
To a large bowl, add chopped tomatoes, herbs, red onion, feta cheese, flour, baking powder and salt and pepper.
Give everything a good mix until a thick batter is made. It should look like a very thick pancake batter.
Pour oil in a wide skillet and bring up to 375 degrees Fahrenheit. Use a tablespoon to scoop tomato mixture into the hot oil, gently pressing down to flatten.
Fry 4-5 tomato fritters until golden brown on both sides.
Once done, place fritters onto a paper towel lined plate.
For the yogurt sauce, mix Greek yogurt with dill and lemon juice and serve Greek tomato fritters with a dollop of yogurt sauce.
Mixture can be made up to a dan in advance.
Tomato fritters can be made, fried, chilled and frozen for later use. After freezing, place fritters on a wire lined baking sheet and bake at 350 degrees Fahrenheit until warmed through.
These Greek tomato fritters are great served immediately after frying and also at room temperature.
