Green Beans with Shallots and Pine Nuts

Simply sauteed green beans are dressed up with fried shallots and toasted pine nuts. And the best part, all made in one pan!

  • Bring a saute pan to low-medium heat and melt butter.
  • Add pine nuts and stir until pine nuts just change color to a light golden brown, about 3-5 minutes.
  • Continue stirring and once color changes, remove the pine nuts to a plate and set aside.
  • In the same skillet, add more oil if needed and add sliced shallots. Increase the heat to medium and saute shallots until slightly caramelized, about 5-8 minutes. Once done, remove to a plate and set aside.
  • Add green beans to the same skillet and saute for about 10 minutes, until green beans are bright green and tender.
  • To serve, plate green beans on platter and top with pine nuts, shallots and an extra sprinkling of flakey sea salt.

Notes

To make green beans ahead of time, you can boil for 2-3 minutes then shock in ice cold water and refrigerator until ready to use. Then saute just to warm through and serve with pine nuts and shallots.
You can also make the pine nuts ahead of time for up to a day in advance. Once sauteed, scatter on a paper towel lined plate and set aside until ready to serve.
