Zucchini flower fritters  is a delightful crisp Italian appetizer made simply by dipping delicate zucchini flowers into a light batter and fried until perfectly golden brown.

Step 1. Whisk the flour and sparkling water (or beer) together until thick and pourable, similar to a pancake batter.

Step 2. Dip the squash blossom into the batter, making sure the entire flower is covered with  the batter.

Step 3. Heat the oil to 360-370 degrees Fahrenheit and fry 3-4 zucchini flowers until golden brown on the first side, about 2-3 minutes.

Step 4. Carefully turn over the zucchini flower fritter and fry on the 2nd side for the final 2 minutes until golden brown.

Step 5. Transfer the fritters on a wire lined baking sheet to drain any excess oil. Then serve the fritters with grated parmesan cheese and lemon wedges.
