Hello Little Ferraro Kitchen readers! My name is Erin and I blog over on The Spiffy Cookie, and I’m excited to be able to guest post for Samantha today. Although the title of my blog has “cookie” in it, you will find recipes covering every meal of the day and to prove it I am sharing a recipe for one of my favorite breakfast treats – granola!
How many things that you would normally buy from the grocery store have you tried to make at home? I have tried my hand at things like Nutella and other nut butters, pita bread, English muffins, bagels, burger buns, pasta/pizza sauce, pesto, ravioli, breakfast sausage, and even marshmallows and vanilla extract. Through all those journeys I have found that it always tastes better and infinitely fresher when it’s homemade.
One of my favorite things to make myself that I used to buy from the store is granola (and granola bars). So today I am sharing the latest granola addition to my repertoire, strawberry banana. It starts out with a typical granola base including oats, brown sugar and honey, but once it’s done dried bananas and strawberries get mixed in to take it beyond ordinary. You could even trade out with your favorite dried fruit mixes. Also add almonds if you’d like (and I do).

Strawberry Banana Granola
- 2 cups old-fashioned oats
- 1/3 cup brown sugar
- 1/4 tsp ground nutmeg
- 1/4 cup + 2 Tbsp olive oil
- 1/4 cup honey or real maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup sliced almonds optional
- 1/2 cup dried banana chips roughly chopped
- 1/2 cup freeze dried sliced strawberries roughly chopped
- Preheat the oven to 300 degrees. Line a baking sheet with parchment and set aside.
- In a large bowl, toss together the oats, brown sugar, and nutmeg. Set aside.
- In a small saucepan, mix together the olive oil, maple syrup, vanilla, and salt. Cook over medium heat for about a minute, until the salt is dissolved and the oil looks glossy. Slowly add the olive oil mixture, while stirring, to the oat mixture to ensure it’s evenly distributed.
- Spread the granola evenly onto the baking sheet and bake for 20-25 minutes, stirring it once halfway through. Remove from the oven and let it cool to room temperature and break up any large pieces. Toss it with the almond slivers, banana chips and freeze dried strawberries. Store in an airtight container.
