I am SO excited for Superbowl!  But I have to be honest here…I am married to a man that thinks the Quarterback is part of a basketball team. I know, should I even admit that?

I’m even worse, I had to Google what teams were going to be playing. Don’t Judge.

However, being a born and bred East-coaster, by birth I am rooting for the Giants…so there. I’m game!

And whenever there’s a reason for a food party, you know I’ll be cooking up a storm…especially for this virtual Superbowl Party, how cool is that?

Isabel from FamilyFoodie is a HUGE influence on Twitter. She hosts #SundaySupper every Sunday and has set up some amazing events. So when I heard she was hosting #SaucySuperbowl #SundaySupper..I just had to jump in.
All of these scrumptious dishes incorporate Intensity Academy’s All-Natural Gourmet Hot Sauces, courtesy of Michelle AKA @SaucyQueen. I had so much fun playing with this new hot sauce, I really wanted to make something delicious and with a California twist.

Fish tacos, grilled to perfection. Basted halibut with Garlic Goodness Hot Sauce and simple salt and pepper kicks off the taste buds. A dollop of cool guacamole and and a squeeze of fresh lime took me right into Paradise. Of course I have to pair this with an ice cold beer, why not?

Ingredients:

1lb fresh Halibut, cut into large chunks
4-6 corn tortillas, lightly heated
Guacamole
Tomatillo Salsa
3Tb Garlic Goodness Hot Sauce for basting
Few sprigs of fresh cilantro
Olive oil for drizzling + few Tb extra added to Hot Sauce
1 lime, quartered

Method:

1) Season fish with salt, pepper and a good drizzle of olive oil. Let sit in clean bowl.

2) Begin heating a grill or indoor grill-pan to medium-high heat. In a separate smaller bowl, add  about 4 Tb of Garlic Goodness Hot Sauce and about 1-2 Tb of olive oil. The sauce is pretty strong so the olive oil helps mellow it out a bit without losing any flavor. Stir to combine.

3) Using tongs, place fish on grill and cook for about 3-4 minutes until good grill marks show. While fish cooks, use a pastry brush to brush the Garlic Hot Sauce onto the fish.

4) Using a flat spatula (that worked best for me), turn fish over and cook on other side for no more than 3 minutes, also basting with Garlic Hot Sauce.

5) Now build your taco! Place fish in warmed corn tortilla, top with guacamole, cilantro, tomatillo salsa and a squeeze of lime.
