A few weeks ago Joe and I went to Koreatown after watching Mind of a Chef on Netflix and became instantly infatuated with ramen and especially the medium-boiled egg that accompanied.
So after a few trial and errors and lots of hard boiled eggs, we tested it out again yesterday and finally came to the perfect medium-boiled egg! The yolk is creamy and velvety and isn’t as drippy as a poached or soft-boiled egg. You want to have a somewhat liquidy center but still have the outside of the yolk partially cooked. The combination is the perfect mouth coating, you’ll want to eat a dozen of them…I promise!
