I have to say, that I am a little excited that summer is coming to an end (bye bye poofy hair) and am so ready to bring in the cool breeze and scarfs...but very very sad to be saying bye to heirloom tomatoes!

I know I may be getting a bit ahead of myself here, but I plan to consume as much heirlooms in the next few weeks as possible. And plums, and peaches and eggplant. Basically everything we don't eat in December. But tomatoes, oh I will miss you.

I am sharing this gorgeous heirloom tomato and polenta quiche on my friends blog, Rachel Cooks today. This quiche has a layer of cooked polenta on the bottom, soft eggs, sliced summer ready tomatoes and roughly torn basil.

So head on over to Rachel's site to check out the recipe!
