Grilled Avocados

by Samantha · 14 Comments

This is not so much a recipe, but more of a revelation! Grill + avocado. Two of my obsessions this summer. We have not turned off the grill this week and because of that our propane actually ran out in the midst of grilling these gorgeous green jewels. I finished them off just in time with our indoor grill pan and the flavor was still extraordinary.

And am I the only one that can not get enough of avocados this year? Butttery and smooth…I know I am only supposed to limit myself to 1/4 a day, but because I know they are so good for me I may double the amount here and there…that’s ok, right?

The method is so simple. Slice an avocado in half, remove pit and grill for 5 minutes until charring. I made a quick guacamole with the charred green fruit and could instantly tell a difference. The guacamole was smokey and deep, still buttery and smooth.

A quick, rustic guacamole. And I mean, very rustic…it doesn’t even lend a recipe. Grilled avo, splash of salsa, lime and hot sauce. Simple and to the point.  Sometimes it just needs to be that way.

Next time you have an avocado, throw him on the grill. You will love it.

Now….what’s next on my grilling list?

I’ve seen people grilling avocados lately. I think you’ve finally sold me on trying these! I mean, how can I deny a revelation?

Wow, this sounds amazing. Thanks for the idea!

Have you tried smoking grains? At the School of Natural Cookery in Boulder, we put rolled oats in a smoker and smoked them on the grill with fragrant wood chips. Then we cooked them into a savory dish with onions, sage, carrots etc. Amazing! Maybe a smoker is on your grill experimentation list?

I have a new found love for grilled avos or avos served in warm dishes. They stay perfectly moist and taste so great! Also, I love that you kept your guac “rustic”. I am a firm believer that ingredients for guac should never be measured. It should be created, to taste 🙂

Congrats on making the Foodbuzz Top 9, Samantha!
I’m always amazed when some avos have cooked a little, and they taste so good. Like, if I put chunks in the pan with a quesadilla and… they taste different than raw, but SO GOOD! I bet grilled on the barbeque’s even better 🙂
    Thanks for posting!

Great idea! I made a very nice guac that included goji berries, and I might re-make on the grill this time. Thanks for the idea! cookingdangerously.com

Grilling avocados is such a great idea, I don’t know why I haven’t done it yet! Except I’ll have to make do with a grill pan rather than a proper grill…but I’m sure it’ll still be delicious 🙂 Nice photos and I love that cloth underneath the plate!

I was just thinking about whether I could grill avocado or not. I have 4 avocados sitting on the kitchen counter. They’re going on the grill tonight with the chicken! I didn’t want to sound too crazy to want to try it, but now I also want to combine it with salsa like you suggested. I’m sure it’ll be great with the grilled leg-quarters! Even more excited for tonight’s dinner now.

I like to keep it simple and let the perfectly fried falafel shine.
Then fill with all your favorite Mediterranean bites: chopped salad, cubed feta with a good sprinkle of za'atar, creamy hummus and a good drizzle of tahini yogurt sauce.

The trick to working with phyllo is to be confident and deliberate! (And to always keep a damp towel over the sheets).

Don’t let the phyllo control you..some sheets may crumble and break, but that’s ok, because when it’s all rolled up and stuffed with shallots, cheese and wilted greens, no one will ever suspect.

Then sprinkle on a healthy amount of Parmesan, Aleppo and Za’atar, and you my friends have made the most fantastic savory borek.

* Get your cast iron nice and HOT!
* Sear steak until deeply charred (don't touch it), then flip.
(This is where you can baste with butter and herbs or finish with a compound butter)
*Once steak is done, let it rest on a cutting board for at least 5-10 minutes.

A few years ago I participated in an international online celebration for Julia Child's 100th birthday.

A handful of us cooked a different JC recipe each week for 100 days leading up to her birthday..it was so fun!

And Boeuf Bourguignon was the delicious finale. I've since made it a good few handful of times and found some shortcuts from the original recipe. (Ssh, don't tell Julia).

For instance, Julia insists on BOILING the lardons (or bacon) instead of rendering!
