Grilled Avocados

by Samantha · 14 Comments

This is not so much a recipe, but more of a revelation! Grill + avocado. Two of my obsessions this summer. We have not turned off the grill this week and because of that our propane actually ran out in the midst of grilling these gorgeous green jewels. I finished them off just in time with our indoor grill pan and the flavor was still extraordinary.

And am I the only one that can not get enough of avocados this year? Butttery and smooth…I know I am only supposed to limit myself to 1/4 a day, but because I know they are so good for me I may double the amount here and there…that’s ok, right?

The method is so simple. Slice an avocado in half, remove pit and grill for 5 minutes until charring. I made a quick guacamole with the charred green fruit and could instantly tell a difference. The guacamole was smokey and deep, still buttery and smooth.

A quick, rustic guacamole. And I mean, very rustic…it doesn’t even lend a recipe. Grilled avo, splash of salsa, lime and hot sauce. Simple and to the point.  Sometimes it just needs to be that way.

Next time you have an avocado, throw him on the grill. You will love it.

Now….what’s next on my grilling list?

Wow, this sounds amazing. Thanks for the idea!

Have you tried smoking grains? At the School of Natural Cookery in Boulder, we put rolled oats in a smoker and smoked them on the grill with fragrant wood chips. Then we cooked them into a savory dish with onions, sage, carrots etc. Amazing! Maybe a smoker is on your grill experimentation list?

I have a new found love for grilled avos or avos served in warm dishes. They stay perfectly moist and taste so great! Also, I love that you kept your guac “rustic”. I am a firm believer that ingredients for guac should never be measured. It should be created, to taste 🙂

Congrats on making the Foodbuzz Top 9, Samantha!
I’m always amazed when some avos have cooked a little, and they taste so good. Like, if I put chunks in the pan with a quesadilla and… they taste different than raw, but SO GOOD! I bet grilled on the barbeque’s even better 🙂
    Thanks for posting!

Great idea! I made a very nice guac that included goji berries, and I might re-make on the grill this time. Thanks for the idea! cookingdangerously.com

Grilling avocados is such a great idea, I don’t know why I haven’t done it yet! Except I’ll have to make do with a grill pan rather than a proper grill…but I’m sure it’ll still be delicious 🙂 Nice photos and I love that cloth underneath the plate!

I was just thinking about whether I could grill avocado or not. I have 4 avocados sitting on the kitchen counter. They’re going on the grill tonight with the chicken! I didn’t want to sound too crazy to want to try it, but now I also want to combine it with salsa like you suggested. I’m sure it’ll be great with the grilled leg-quarters! Even more excited for tonight’s dinner now.

*Meyer Lemon Bars* It doesn't get any more *Meyer Lemon Bars*

It doesn't get any more classic than this.
When citrus is this bright and beautiful, there's not much you need to add.

Who has made lemon bars this season?

**Vegetarian Stuffed Grape Leaves** Filled with ba **Vegetarian Stuffed Grape Leaves** Filled with basmati rice, chickpeas and loads of fresh herbs.

One of the first recipes my mom taught me, was how to roll grape leaves.

And whatever stuffing you decide to add, I have a few tips to share.
* Jarred grape leaves are super briny, take them all out and rinse them very well.
* Separate each leaf (that was one of my moms biggest peeves).
* Remove the hard stem before adding filling.
*Each leaf has 2 sides, a shiny and dull side. Add filling to the full side, so shiny side is up for presentation.

What would you stuff grape leaves with?

*Chicken Saltimbocca with Speck and Herbes de Prov *Chicken Saltimbocca with Speck and Herbes de Provence*

Boy oh boy, do I have a weeknight chicken recipe for you!

My version of saltimbocca takes a bit of French inspiration and in my (humble) opinion, has bolder flavors!.

Pounded chicken cutlets are seasoned with aromatic herbes de Provence and layered with basil and smoky speck, seared and finished in a light white wine sauce.

Saltimbocca translates to 'jump in the mouth', which is exactly what these flavors will do.

*Homemade Preserved Lemons* New on the site *Homemade Preserved Lemons*

New on the site, is a step by step guide on making your own homemade preserved lemons with some recipe inspiration and tips.

There is nothing like the aroma of preserved lemons. Citrusy, bright and floral.

You just need two ingredients and about two weeks time. Then chop or slice up to use in so many things, such as tagine or preserved lemon compound butter for fish. How good does that sound?

How would you use preserved lemons?

*Herb and Citrus Roasted Salmon* Oh hello t *Herb and Citrus Roasted Salmon*

Oh hello there citrus season! Sure, you could take winters sunshine and bake it into a cake or curd, but there is something about citrus + salmon that never goes out of style.

Wild salmon filets are packed with a fresh herb "crust" and poached in a bright white wine lemon and olive oil marinade.

I've made this recipe with so many different variations...different herbs or with blood orange would be fantastic!

What would you make this citrus season?

*Braised Short Ribs with Red Wine* What is *Braised Short Ribs with Red Wine*

What is your favorite method of cooking? If I was left to one, it would be braised.

A good hard sear, then low and slow (preferably in red wine) for hours until the tough muscle fibers are forced to break down, soften and literally melt in your mouth.

A few herbs, some aromatics and then just let the braise do the rest of the work.

*Four Ingredient Lemon Herb Couscous* Today *Four Ingredient Lemon Herb Couscous*

Today, we're chatting about "back pocket recipes" as I'd like to call it.

Recipes that we all should know and can whip out at a moments notice. A few of mine are: creamy polenta, a bomb roast chicken and classic spaghetti and meatballs.

The other day, I shared my chicken tagine recipe and this simple lemon herb couscous would the perfect companion to those bold flavors.
