    Crab in a Boat

    If you are living anywhere near the West Coast this week, you are realizing the intense heat that has been facing us lately. Now don’t get me wrong. I love, love warm weather! I grew up in Hawaii and I welcome the sunny skies with open sandy arms, but for some reason, this week has taken a toll on me.
    The sun is intense, scorching and bright. The wind is still and it is just passed Labor Day.
     I’m ready to dust off my crockpot.
    On this hot summer-like day in the first week of September, too hot to turn any electricity on in the kitchen, a simple crab salad is on the menu for lunch.
    Lump crab meat is always in our freezer or fridge. A light coating of home made mayo does wonders and is worth the arm workout. A pinch of cumin, a dash of garlic powder, some fresh squeezed lemon juice and salt and pepper round out this simple crab salad.
    Scoop in avocado halves and have the most refreshing lunch of your summer life! The buttery,soft avocado smooths well with the delicate crab and all blends on your tongue perfectly. The dash of cumin is just enough smokiness, no more! Fresh lemon juice is key for color and flavor.
     Now I’m off for stick my head in the freezer.

      Man that crab in a boat looks sooo good! I grew up on a island and ate crab non stop. Now that I live in Arizona I have been looking for ways to eat crab. I am definetly trying that recipe. I love crab and love avocados. Just hope i can find the time. Great post and pictures
