I thought I would give you a little tomato break  for a bit and show off these breakfast treats.

Super simple coconut pancakes with a little chia twist. And can someone tell me why I never, ever make pancakes? I forget how easy it is to throw together! For some weird reason, I always think that making pancakes is labor intensive and I don’t have all the ingredients. But pancakes is just the oppiosite! It’s basic ingredients of flower and and baking powder and whateer other flavors you want to add in there.

The last time I made pancakes was almost a year ago! Probably longer? So sad, this needs to change!

And I have to be honest here. I am a very..very picky pancake eater! I don’t like those thick fluffy pancakes at all! What I like is just the way my mom made them for me growing up. The pancakes are on the thinner side with a little fluff in the middle but the MOST important part is the crispy edges on the outside! That is my FAVORITE part of pancakes, those thin, crispy edges that are almost fried. My mom always made them that way for me. And the trick is what you cook them in…butter AND oil. Very important! Both the butter and oil help the pancakes not burn and the oil gives the batter the crispy edges that I love so much.

Trust me on this, crispy edges is the way to go.

Coconut Chia Pancakes

Ingredients

  • 1 c flour sifted
  • 1 Tb sugar
  • 1 Tb baking powder
  • 1 Tb chia seeds optional
  • 1/4 tsp salt
  • 1 c coconut milk
  • 1 egg
  • 1 Tb oil canola or vegetable + more for drizzling in pan
  • 2 Tb butter for cooking pancakes you may need more after a few batches
  • Coconut flakes for garnish

Instructions

  • Begin by heating up a large non-stick skillet on medium-high heat.
  • In a large bowl, combine the flour, sugar, baking powder and salt. Stir to combine.
  • In another bowl, combine the coconut milk, egg, oil and chia seeds. Stir to combine
  • Add the dry mixture to the wet mixture, whisking to combine.
  • Once your skillet is heated, add butter and oil and allow butter to melt. Use a ladle or a large tablespoon to spoon dollar sized pancakes in skillet.
  • Cook pancakes on 1 side until you see little bubbles around the edges. That should tell you that the first side is cooked. Flip over and cook over side for another 2 minutes.
  • Garnish with flaked coconut.

Can’ stop…won’t stop…frying latkes that is Can’ stop…won’t stop…frying latkes that is! And dare I say that these caprese latkes are my favorite latke yet? I thought the hatch chile latkes were out of this world, but it’s that roasted garlic and those charred tomatoes that win me over. 
Oh and the basil oil, and the burrata! All of it is perfection.
