In a small pot, boil the quinoa and water together and then simmer for about 15 minutes until water has evaporated. Fluff with fork and allow to cook to room temperature.
Whisk together the lime juice and honey in a bowl until well incorporated.
In the same bowl, add your fruit and cooked quinoa and stir well
Chill quinoa salad for at least 1 hour, then garnish with fresh mint.
