Strawberry Banana Granola

A simple strawberry banana granola that is full of oats and dried fruit and seasoned with warm nutmeg and sweet maple syrup.

  • Preheat the oven to 300 degrees. Line a baking sheet with parchment and set aside.
  • In a large bowl, toss together the oats, brown sugar, and nutmeg. Set aside.
  • In a small saucepan, mix together the olive oil, maple syrup, vanilla, and salt. Cook over medium heat for about a minute, until the salt is dissolved and the oil looks glossy. Slowly add the olive oil mixture, while stirring, to the oat mixture to ensure it's evenly distributed.
  • Spread the granola evenly onto the baking sheet and bake for 20-25 minutes, stirring it once halfway through. Remove from the oven and let it cool to room temperature and break up any large pieces. Toss it with the almond slivers, banana chips and freeze dried strawberries. Store in an airtight container.
