A gooey skillet chocolate chip cookie made right into a cast iron skillet!
The amazing thing about a cast iron, is that the cookie bakes right inside it. SO when it bakes, all the chocolate chippy goodness slowly melts and then you sink your spoon in with bits of chocolate touching the skillet. It's pretty awesome. The sides puff up and become crispy which is my FAV part and the middle is the gooey, chewy center of the cookie. This has the best of all the cookie worlds. Of course you can't stop without slabbing a hunk of ice cold vanilla ice cream on top so the milky sweetness can ooze all over the warm cookie. Have you fallen in love yet? It's classic so is my Rice Pudding Supreme, Inspired by Joe's Grandmother.
Note: I made this in 2 small 6in cast iron skillets and I believe the original recipe was done in a large 12 in skillet. This was enough batter for both small skillets and I also reduced the time from the original recipe from 25 minutes to 20 minutes. So if you are using a large skillet, check at 20 minutes and continue longer if needed.
Method:
1) In a large mixing bowl, beat together 1 stick of butter and both sugars until combined and creamy.
2) Add egg and vanilla and mix until incorporated.
3) In another bowl, sift together the flour, baking soda and salt and slowly add that into the butter mixture. Mix until incorporated but don't over mix.
4) Add chocolate chips and just mix until incorporated.
5) Grease your cast irons with 1 Tb of butter on all sides.
5) Divide dough in half (if using small pans) and press dough into skillet, coming up on the sides.
6) Bake at 350 degrees F. for 20 minutes or until the edges begin to brown.

- ½ light brown sugar
- 1 egg
- 2 tsp. vanilla extract
- 1 ¼ cups all-purpose flour
- ½ tsp. baking soda

- ½ cup semi-sweet chocolate chips
- ½ cup milk chocolate chips
- Optional: vanilla ice cream

This looks amazing - a drizzle of chocolate sauce on top of the ice cream would push it over the edge.
