Pina Colada Popsicles for Got Milk?

Do you like pina coladas?? And getting caught in the rain?…. Yes…I had to go there! How about pina colada popsicles?! Oh..my..word! I know..I know..you love it, right?

I am participating with the Foodbuzz Tastmaker’s program and the Got Milk Campaign to help promote the wonderful benefits of natural milk. I was invited to another Got Milk? event earlier in the summer (remember when I made this panna cotta?) and their honest purpose is to spread the word on the simple and natural ingredients of real milk. That is where this recipe comes from as well and is a perfect summer treat.

GOT MILK?’s latest campaign, “Science of Imitation Milk,” educates California consumers of the long list of hard-to-pronounce ingredients in imitation milk, contrasting that of the pure, simple nature of dairy milk. To fully illustrate this message, CMPB will sell limited edition milk glasses from July 9 through August 5, 2012 to benefit THINK Together, which supports after school programs for children and their parents to make wholesome, real and simple food choices for a healthy lifestyle.

During the four week sale, the pair can be purchased on www.gotmilk.com/glasses for $15, which includes shipping and handling,
with 100 percent of the purchase going directly to the community organizations to support nutrition education
programs in Los Angeles, Sacramento, San Diego, San Francisco/San Jose and Fresno. The goal of the sale is
to raise $10,000 for each area for a total of $50,000.

These popsicles were the first I have ever made. Easy enough to throw the mixture in a blender and pour them into the molds, which surprisingly was the more difficult part of the whole escapade. Getting just enough mixture into the narrow molds and then tip-toeing as delicately as possible towards the freezer using your third arm to open the door. That worked out great. Of course when I savored myself with the ice cold treat, all the anxiety flew away and I thought about laying under palm trees and getting caught in the rain.

Pina Colada Popsicles for Got Milk?

Recipe inspired by Got Milk?

Ingredients

  • 2 cups fresh pineapple
  • 1 cup pineapple juice
  • 1 1/2 cups coconut water
  • 1 cup whole milk
  • 1/2 tsp vanilla extract
  • 1/4 cup sugar
  • 1/4 cup light rum (optional)
  • 3/4 cup shredded coconut

Instructions

  1. Combine all ingredients in a blender until smooth.
  2. Pour into popsicle molds. After 30 minutes, insert wooden popsicle sticks and freeze for at least 3 hours.

    I think this is my fave popsicle post I’ve seen. Pina colada is such a great taste explosion so putting it in popsicle form is brilliant.
