Quinoa Fruit Salad

I act out of impulse, quite often. And I’m working on that. I won’t go off and buy $500 pair of shoes, but if I see something that’s drool worthy, I will probably make it right there and then.

That was the case with this fruit salad. I was it posted on Two Peas and Their Pod and I instantly fell in love. The colors, the vibrancy, how could I not? I had everything on hand and a delectable amount of summer fruit in the fridge. Raspberries, blueberries, blackberries and the sweetest peaches I have ever tasted.

This was so easy to whip together and it was done quickly after a killer workout (I need to tell you more about what’s been going on there). It was filling and sweet and hit the spot on this hot So Cal day.

Quinoa Fruit Salad

Recipe inspired by Two Peas and Their Pod

Ingredients

  • 1/2 c quinoa
  • 1 c water
  • Pinch salt
  • Mixture of fresh Fruit:
  • Blueberries
  • Blackberries
  • Raspberries
  • Peach, cut into cubes
  • Fresh basil or mint leaves, chopped
  • Dressing!
  • 1 lime, juiced
  • 2 Tb honey

Instructions

  1. In a small pot, boil the quinoa and water together and then simmer for about 15 minutes until water has evaporated. Fluff with fork and allow to cook to room temperature.
  2. Whisk together the lime juice and honey in a bowl until well incorporated.
  3. In the same bowl, add your fruit and cooled quinoa.Stir well. Add chopped basil or mint for garnish.
