Mahi Mahi with Jasmine Rice with Black Sesame Seeds {Guest Post}

Happy Monday! Today is all kinds of super-duper exciting because I have another amazing guest on the Little Ferraro Kitchen. If you are a fellow “food-blogger” then you already know this Lunatic. However, if you are one of my lovely readers, you’re in for a real gut-hurting, eye-tearing, I can’t stop laughing-treat!

Kim from Cravings of a Lunatic has been around for a little while now. She has a HILARIOUS blog and shares her humor, her family stories and her amazing funny personality with the world. I fell in love with her instantly, and of course…we have a Hawaii connection. Aloha brings good people together.

Today Kim made something I could eat everyday…honestly! And I am so proud of her because she is venturing out to the “healthier” side of food these days. (You can read more about it later).

And now I introduce to you….”The Lunatic”

Hi folks.

For those who don’t me I am the nutball behind Cravings of a Lunatic. It’s a rather indulgent type of blog with things like Turtle Banana Splits and Trix Rice Krispies and enough ice cream to start my own shop one day. I blog about whatever cravings hit my brain on any given day. If you read you know I mostly crave things doused in sugar and even more things battered and deep-fried. Recently I’ve decided I need to have a little balance in my life. Meaning I do not want to break the scale when stepping on it. I am now on a quest to healthy things up a bit. I’m not going to go all crazy and start eating tofu (blech!) or anything but making some small steps to make smarter choices some days.

When Sam mentioned she was looking for people to guest post for her I’ll admit I subtly hinted around I’d like to do one. Okay that’s a total lie. I dropped a humongous hint and pretty much foisted myself on her. I adore Sam so much so it was a total pleasure to offer up my services for the day. It took me about a millisecond to decide what I wanted to make. Awhile back Sam helped advise me on Hawaiian dishes for a guest post I was doing. I went to Hawaii on my honeymoon many, many, many (okay so like a gazillion, geez!) moons ago. I fell in love with Oahu, the place, the people, the cuisine. I made Haupia last time I did a Hawaiian dish. So this time I wanted to tackle Mahi Mahi. When Sam advised me previously on Hawaiian cuisine she told me Ahi is very “ono”, meaning good. I am not a tuna fan though. So I opted to do the Mahi Mahi for her. I also used her previous suggestion to do a nice jasmine rice with it and toss some black sesame seeds over it. I took the fish one step further and made a pineapple salsa for it. So while guesting for Sam I was able to take her recommendations from our past conversations and make a beautiful Hawaiian influenced meal in her honor.

I am totally hoping eating things like this will help me reach my weight loss and fitness goals easily. I made a deal with my hubs that once I hit my goal we’re all going to Hawaii as a family. I have no idea how I got the hubs to agree to it. All I can think is he must be hoping I fail so he doesn’t have to pay for the trip. We’ll have to keep our eyes peeled to see if he tries to sabotage my plans. If I wake up and there are donuts on the night stand and a year supply of Pepsi in the fridge then I’ll know he’s up to no good. I have visions of sugar and chocolate being i.v’d into my veins when I sleep. Honestly I think I’ll have to sleep with one open from now on. I just know he’s up to no good. What kind of dude agrees to such a thing? Or maybe he just wants to go scuba diving again with his former hot wife. Nah, that couldn’t be it.


 Mahi mahi:

2 Mahi Mahi skinless fillets (280 grams)
1 tablespoon Ponzu Sauce
Salt and Pepper to taste

Pineapple Salsa:

1 cup chopped fresh pineapple
1/4 cup red onion
1/2 orange, cut into segments then cut into small pieces
Juice of 1/2 orange
2 tablespoons honey
1 teaspoon of Black sesame seeds

Jasmine Rice

1 cup of jasmine rice, rinsed and soaked for 30 minutes prior to cooking
2 cups of water
Salt to taste
1 teaspoon black sesame seeds


1) For the Mahi,Cut fillets into 2 pieces each so you end up with 4 nice pieces of fish.
 2) Brush on your ponzu sauce on both sides and let stand for about 15 to 20 minutes.

3) Preheat your grill to medium to high heat and salt and pepper both sides before grilling.

4) Place on the grill and cook for 5 to 8 minutes per side depending on how thick your pieces are.
You want it flaky but not tough or overcooked.

5) For the pineapple salsa, cut up your pineapple, onion and orange and toss it in a bowl.

6) Squeeze 1/2 an orange over top of the bowl and add honey. Mix well.

You can pop this in the fridge till ready to serve or leave it at room temperature.
Once ready to serve sprinkle with black sesame seeds.

7) Now for the rice, rinse and soak your rice for 30 minutes prior to cooking if you can. If not at least rinse it.
 8) Bring your water to a boil in a saucepan and add some salt to the water.

9) Drop in your rice and stir once and turn down to a simmer.

10) Cover and let stand for about 8 to 10 minutes.
Try to refrain from stirring it until it’s ready.

11) When done, fluff with a fork and place on plates and sprinkle black sesame seeds over top.

I’d like to thank Samantha for having me today. I am so honored and touched you asked, or well let’s be honest, gave in to my begging and crying. I hope I did your Hawaiian roots proud. I am totally swinging by to pick you up when we head on our trip over there. You can stowaway in my luggage. Just bring your sense of humor. Last time we went we bought our scuba diving video. When we sat down to watch it with about 30 family members let’s just say things got a little dicey. You heard the whole family make a collective “aw” when they saw my bright pink bikini go swimming across the screen holding hands with hu…oh wait that wasn’t hubs. I was holding hands with the instructor who saved me from certain death when I wandered away from the group and cut myself on some coral. I had to swim to the top to make sure I wasn’t going to get eaten by sharks. The nice instructor said he’d protect me so I swam off into the sunset with him. What? He totally saved me. Like you wouldn’t do the same thing. Wait, maybe that’s why hubs wants to sabotage my plans. Now it’s all making sense.
