Vegan Banana Granola Bars

 
Vegan granola bars rock my world.  Can you see me dancing and jumping up and down? Well you should…because I am.
 
These bars have NO butter in them. NONE…zippo. Can you imagine? And they are moist and sweet and caramel-ey to my sweet-tooth content.
 
I’ve been pretty obsessed with Oh She Glow’s Vegan blog recently and after making something on the savory side, I was ready to dive into some vegan baking.
 
 
What I loved about this baking adventure? Super easy! No waiting for the butter to room temp and no stand-mixer involved. This was all done with 1 spatula and 2 bowls and whatever was laying in the cupboards. Healthy and couldn’t be any simpler.
 
This was also the first time I had the chance to use Coconut Oil.
 
Coconut Oil is the hottest health trend going on right now, but to be honest, I was skeptical to try it. As you can see, it’s a solid oil and thinking about that laying inside of my arteries just scares the daylights out of me. Coconut is also known to be high in saturated fat.
I was concerned and therefore did some research.
 
Why is everyone saying this is so amazing?
  • Increases metabolism
  • Supports immune system
  • Medium-chain fatty acid = easier to break down
  • May aid in Alzheimer’s Disease: Brain needs glucose to survive, but keytones can be used as alternative source. Ketones are easily accepted to the brain and are medium-chain triglycerides, which is found in Coconut Oil.
  • Stimulates and strengthens hair
 

Pretty remarkable, huh?

 
 
With creamy bites of banana layed throughout each square, you forget how healthy and know how delicious these treats are. Pieces of dried fruit and whatever nuts and seeds you have leftover are right perfect to just throw in. A slight sweetness of pure vanilla and a good amount of texture coming from feel-good for ya oats and chia seeds. Vegan granola bars ROCK my world!
 
Method:

1) First, preheat oven to 350 degrees Fahrenheit and line an 8 inch square pan with parchment paper, then
in a medium bowl, combine the brown sugar, ground flax seeds, chia seeds, soy milk, coconut oil, and vanilla together and mix well.

2) Next, cut the bananas into chunks and stir them into the wet mixture. Using a fork or potato masher, mash the bananas into the wet mixture while leaving it a little chunky.

 
 
3) Add dried fruit into the wet mixture.
 
 
4) In another bowl, mix together the flour, oats, spices, baking powder and salt.
 

5) Then add the wet mixture to the dry mixture bowl and stir well.

 
6) Scoop the granola batter into the pan while pressing down and smoothing out with a spatula. 
 

7) Bake at 350 degrees Fahrenheit for about 35 minutes until the edges are crisp and golden.
Leave in pan for about 10minutes before taking out and cutting into squares.

Ingredients

  • 1/4 c almond milk
  • 1/2 c brown sugar
  • 1 Tb ground flax seed
  • 1 Tb Chia seeds
  • 1/4 c coconut oil, melted
  • 1 tsp vanilla extract
  • 3 very ripe bananas
  • 1/3 c cranberries or mixed dried fruit, chopped
  • 1 1/2 c regular oats
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • freshly grated nutmeg
  • 1/4 c spelt flour (or other flour)
  • 1/2 tsp baking powder
  • kosher salt

Instructions
