1-2 garlic cloves, chopped
Flax eggs: 2.5 tbsp ground flax + 1/2 cup warm water, mixed in bowl
1 cup oats, processed into flour*
1 1/2 cups bread crumbs
1 c grated carrots
1 c cooked black beans, rinsed and roughly pureed or mashed
Large bunch of chopped parsley (or fresh herb of choice)
1/3 c almonds, chopped (toasted if preferred)
1/2 c sunflower seeds, (toasted if preferred)
1 Tb Tamari (soy sauce)
1 heaping tsp. cumin
1 heaping tsp turmeric
1 tsp. oregano
Few dashes of hot sauce (optional)
Olive oil for drizzling
Salt and pepper, to taste
Butter-lettuce and tomato
2) Place all ingredients (except the seasoning and spices) into a large mixing bowl and stir very well. Then add seasonings and salt to taste.
3) Using slightly wet hands, shape veggie mixture into patties.I would up making about 6 very large burgers! Next time I’ll try and make 8-9…this mixture makes a lot!
4) Cook burgers in heated skillet with a drizzle of oil for about 5 minutes on each side until golden brown and crispy.
5) Top with some Homemade guacamole, vegenaise and crisp butter lettuce and tomato. So good!
