The Ultimate Veggie Burger and Other Confessions

I’ve been trying to eat healthier lately…have you seen the wonderful concoction I created every morning before class? Or what Joe likes to call, “Green Sludgey”…ha
Fruit + Veggie..yummm
Frozen Berries, Spinach, Almond milk, Greek yogurt, spirulina, Chia seeds, Banana
So what brought all this on? Well, my recent trip to the Health Center. I decided to get a Lipid panel done and really wanted to know what was going on inside of me. Before the semester started I wasn’t eating the best as I could, hardly exercising and just didn’t feel optimized.
Now don’t get me wrong, I believe in wholesome foods, I don’t diet and hate fads. I’ll put a pad of butter in a reduction and use a stir of heavy cream in my favorite vodka sauce-but moderation is key, right?
Confessing this is harder than I thought, mainly because I thought I was doing pretty good. I don’t eat fast food, no junk food,…but I have been in denial of the amount of fat calories and animal fats I have been consuming.

HDL: 59
LDL: 150 H
Trig: 102
This is the highest I have ever seen it. Scary! And it WILL change.  Goal: Lower Chol below 200 (preferably 25%) within 3mon. I will re-assess in May.
Now onto the Ultimate Veggie Burger!
I made this a little while ago when I was oogling it on Oh She Glows-It look flavorful and scrumptious! A lot of prep went into it, but the results were fantastic. I also made them quite larger than I should have…whoops!
Adapted from Oh She Glows
1/2 onion, chopped 

1-2 garlic cloves, chopped
Flax eggs: 2.5 tbsp ground flax + 1/2 cup warm water, mixed in bowl
1 cup oats, processed into flour*
1 1/2 cups bread crumbs
1 c grated carrots
1 c cooked black beans, rinsed and roughly pureed or mashed
Large bunch of chopped parsley (or fresh herb of choice)
1/3 c almonds, chopped (toasted if preferred)
1/2 c sunflower seeds, (toasted if preferred)
1 Tb Tamari (soy sauce)
1 heaping tsp. cumin
1 heaping tsp turmeric
1 tsp. oregano
Few dashes of hot sauce (optional)
Olive oil for drizzling
Salt and pepper, to taste

Butter-lettuce and tomato
Good Rolls

1) In a large skillet, saute onions and garlic in olive oil. Then mix your flax egg ingredients together in a small bowl and set aside for at least 10 minutes while you prepare the rest of the ingredients.

2) Place all ingredients (except the seasoning and spices) into a large mixing bowl and stir very well. Then add seasonings and salt to taste.
3)  Using slightly wet hands, shape veggie mixture into patties.I would up making about 6 very large burgers! Next time I’ll try and make 8-9…this mixture makes a lot!

4) Cook burgers in heated skillet with a drizzle of oil for about 5 minutes on each side until golden brown and crispy.

5) Top with some Homemade guacamole, vegenaise and crisp butter lettuce and tomato. So good!
